Meet the Coquito Celebration Cake — a two-tier stunner inspired by my Puerto Rican roots, summer daydreams, and the joy of small batch baking.
This beauty starts with vanilla sponge soaked in coquito (yes, the real deal — coconut cream, cinnamon, nutmeg, and all), layered with a whipped coconut-cream frosting that’s light but still indulgent. The toasted coconut rim adds just the right crunch, like a little edible halo around each tier.
And then, the florals.
I styled this one with tropical orchids — because sometimes your cake wants to dress up, too. The final look felt like it belonged at a destination wedding, or maybe just the world’s most fabulous mermaid brunch. Either way, it was giving “sun-kissed and ready to party.”
